I still have no idea what they were supposed to represent? I remember Gary calling the Blue team 'animals' and thought it was some sort of 'in' joke the production crew ere having (as the presenters seemed puzzled too) but then someone's just suggested it was all the lackeys, the poor sods who were seen washing up and doing all the serious donkey work letting off steam

I can only assume that the Extra Portions show format was agreed or required, for whatever reason, to include live footage from the kitchens at pre-determined intervals. When it came to the last episode, some YTS producer obviously realised that they would have nothing to show so they came up with that idea at the last moment. The gorillas were clearly acting up for the cameras only for those periods that the live footage was being shown, and it did become somewhat boring showing them for 3/4 different times.

Has Durden-Smith ever made a funny joke? Certainly not in my hearing!
The 'Extra Portions' shows were execrable - I watched just twice, for around five minutes each.
