KFC at home?

So, I used this recipe for the herbs and spices, rolled bone in, skin on chicken thighs in egg and milk mixture, then dredged them in plain flour and the spice mixture and deep fried them for about ten minutes with the oil not too hot, just sizzling away.

Then transferred them to a baking tray and finished them in the oven.

It was really good, it smelled amazing while it was cooking, the texture was perfect, very crispy tasty skin, very moist juicy chicken.

But the only bit of the spice mix I couldn't get was MSG and I think it will be even nicer with it so I will go to the chinese supermarket and get some and try it again sometime. I'm sure tesco used to sell it?

You can get MSG on ebay, A lot of places stopped selling it as it got a lot of bad press a few years back. I personally have no issues with MSG in moderation and you don't need a lot to notice its affect.

Yeah, I have no issue with it either, it's just a really good flavour enhancer. Will buy some soon

I am hooked on their mini fillet burgers. Quite often I have 2. Good value as well

Has anyone made the batter crispy and thick and textured like they do? I've emulated flavours but not texture

Yeah, the way I did it in the post above, the texture was perfect. What spice mix did you use?

I have never had a burger from KFC. I like the chicken too much to order a burger when I go in.

Same here. I'm often tempted but I'd have to buy a couple of fillets or pieces as well

The spice mix I used doesn't taste much like KFC though, it kinda tastes like chicken and stuffing, it's nice but not like KFC.

Anyone have one that does? Thanks

I've been trying to replicate the KFC coating ever since i became vegetarian. A couple of years ago i bought bulk loads of spices and mixed up batches of all the different copycat recipes along with my own blends and none of them taste like KFC.

The closest i found was by a woman calling herself BeckinOz on a forum dedicated to replicating KFC. I can't find the original post anymore but i did save a copy because i like it even more than KFC.

The recipe as is was a bit too sweet and not salty enough for me so i knocked the caster sugar down to 2tsp and increased the salt to 3tsp.

There are definite hints of KFC in this recipe, including that special moorish flavour not entirely due to the MSG.

note to self: do not use cake flour. For next batch change to 3/4 cup + 1/8 cup of plain flour (the proper fraction is there in my head but hey it is easier to do it this way!) Add 1/8 cup of corn flour. Increase salt to 1/3 tblsp.

4. 11 HERBS AND SPICES

1 tsp Black Pepper
2 tsp White Pepper
1/2 tsp Tarragon
1/2 tsp Mustard
1/4 tsp Bay Leaf
1/4 tsp Cloves
1/4 tsp Nutmeg
1/2 tsp Sage
1/8 tsp Mace
1/4 tsp Ginger
1/8 tsp Coriander

O.K, now to explain why I used these specific herbs and spices;

1.From doing minor research that nearly all of us have done before, it was pretty obvious that Harland Sanders was not a wealthy man. Learning to cook from a very young age with what was available in their kitchen has lead me to believe that the most basic pantry items were used in his chicken recipe.

2.Reading recipe books from the 1900's onwards (which are freely available as downloads on the net) and learning of his most favourite recipes, I wrote down the most common and recurring items that were used in these recipes.

3.My reason for using Bay Leaf in my recipe (which I have used long before it was mentioned here) was because of how prolific it was grown in the area. It would be easily obtained.

4.Harland Sanders loved his mother's Baked Ham recipe. This connected with me as I tend to use the same herbs and spices on pork as I do on chicken. To me they just both match!

In a couple of old recipe books around the same time as he would have been either just born or before, the main ingredients were:

Tarragon
Peppercorns
Cloves
Nutmeg
Bay Leaves
Mace

These are ingredients that have always attracted me when making OR.

5.The reasons I do not use Cardamom are as follows:

*The smell makes me sick
*I have trialled it many times in my batches and not even my dad likes it (he is the KFC connoisseur from the day it opened in Australia!)
*Cardamom was the third most expensive spice behind Saffron and Vanilla at the time (don't ask me what it is now, as I wouldn't know)
*The substitute for Cardamom can be Cloves and Nutmeg, which is what I already use in my batches.

6.All the dry mix makes the best gravy Very Happy”

Has anyone tried Church's Fried Chicken while in the US? I don't mind KFC, but Church's was a lot better.
