Pork loin steaks

I have just had a couple of pork loin steaks for my dinner.
I fried them for a couple of minutes on each side, but when I came to eat them, they had dried out quite a bit.
How can I cook them so that they are succulent and moist ?

I don't know about steaks but my favourite cut of pork is shoulder, slow roasted, it's never dry and always tastes amazing whatever you flavour it with. It takes a long time and the really good smell when it's cooking does my head in but it's worth the wait. Then just pull it apart with forks and eat the crackling.

It's cheap too. If you have left over just freeze them and it's just as good defrosted.

I love pork shoulder! The crackling is my favourite bit.

I don't think pork needs as much searing as say lamb or beef, so I poach them in a cider-based sauce after searing them for a few seconds each side. Once done, I take out the steaks and reduce the liquor so that it thickens. Works for me

I had these on Saturday evening with some creamy potatoes and mediterranean roast veg, all baked in the oven for 20 minutes at 175 fan.

I always coat pork steaks with a powder marinade earlier in the day to give it a chance to impregnate the meat, and bake in an uncovered oven dish on a lower shelf.

I tend to make a rub out of either 5 or 7 spice and soy sauce. I marinade the pork steaks in this.

I then reduce down some apples, caramelising them so I get a bit of a sticky sauce I then add some stock, and fry the pork steaks off in the sauce mixture.

Ooh, you are awful!
But I like you!

Did a couple of pork chops a few nights back.
Slit the rind through every inch - it stops the chops curling.
Using tongs hold the chops upright to sear/brown the rind until crispy - hold both chops together.
Then just treat them as you would a steak

Chinese Five Spice and Thai Seven Spice are premade blends available in most supermarkets.

Some sort of rub, and grill them. Don't overcook, and they will be nice and moist.
