In fairness, I haven't been in a situation with an actual celebrity, but I've been in a situations in which I've tried to plan out something I'm going to say to someone, been a bit nervous about it, and all of what I was going to say goes out the window when I actually try and say it! 
I'm really not altogether sure why they insist on having the props. My guess is that for people like Ed and Robert, the producers pin them down as the kind of entertainment characters in the show - hence all the props. Also perhaps for people like Ed who aren't necessarily blessed with bags of dancing ability the props and strong themes can distract from the dance somewhat.
But, in a broader sense, I think you could well have a point in saying that they want to appeal to a younger audience. Certainly in more recent years they've wanted to definitely appear as a full on entertainment show (rather than just focusing on the dancing) and I guess the use of props and things is all part of that.

thanks for your reply, yes, the props may appeal to a younger audience but I think you're right in saying that the less able dancers may need a theme and props to distract the audience from their dancing ... or lack of it
