She's having a go about Saira for lying about the task. Unless I've misunderstood, wasn't lying something Saira had to do in order for the rest of the house not to realise what she, (and Marnie), really had to do in order to pass the task?

And if that is the case, why is she not saying the same thing about Marnie as well?

No, at the stage of the vid they know that the task was a con. Sam is actually saying how well Saira did because during the task Sam was convinced Saira was being horrible. Perhaps watch it again?

So why is the video entitled "the fox's claws are out", with the description saying that after the task, Sam was "not happy"?

It seems to me that she's retelling what happened and is surprised how well Saira did in convincing her.
