I think his moments playing bowls with Ricky seem real enough, their quiet chats in the garden seem real, the chats he's had with James late at night seemed real enough. He didn't use the baby voice, was just conversing, all rather different to the antics we see on highlights.
As to incidents without Bear that viewers found interesting or entertaining - I don't watch BB to be 'entertained' in the Britain's Got Talent kind of way, to watch people 'performing', I watch to see a bit of who they are as people, to see human interaction, sure also for the funny bits, the disagreements (which are always more interesting when they are LESS put on and more organic, also when they are less often - anything becomes less interesting when you see too much of the same), the friendships that form.
I've been entertained - when they bother to show him - by Frankie quite often, from his botox face person to his chats with people. I've enjoyed Marnie more when she's been chatting and laughing with other housemates, the interactions around the dinner table on live feed. How much the other housemates generally get on with each other and enjoy each other's company when it's not spoiled by childish antics.
Live Feed has been the real show for me - and that even includes Bear when he's on that. I wouldn't have known about the bowling game, the friendship with James and Ricky without Live Feed.
ETA: The highlight show has been aimed at the younger market more than ever this series I think, they know that the viewers of individual shows that the young people are on or have been on will be watching and, much as they seem to enjoy shows such as TOWIE - which involved A LOT of sitting around talking about people, they don't seem to want to see that on BB, which is what BB used to be about oddly enough.
