There is no way that they could not have known who cooked those dishes. Brett hasn't shown the skills necessary to deliver a foam like that (even with the collapse) or the experience to put together the side elements.
Not sure how you could get round it - but it wasn't a true blind test.

Do you think they ever really are? I suppose towards the end of the run it might be more difficult but the chef's plating is usually better and the techniques more sophisticated. It usually seems like a bit of a pantomime when they go through the 'whoever made this bit'. The only time it might not be obvious is when they have apprentices or young green chefs on.
I don't see any way round it unless they taste literally blind!
Have never seen Supernanny before but this mother is a wimp. Seriously "I don't like to see them upset" so she allows them to rule the roost, swearing, vandalising property and spitting. Yes, aware that this is a total off-topic but simply couldn't believe what I was seeing.

I think that the only way they can blind taste now is if they are all cooking exactly the same thing. They are familiar with the style of each competitor by now so it makes it harder to look at something and not say "oh that's so and so's style, I recognise the way s/he cuts their carrots/makes their puree."

Yes, I watched it a couple of times but it wasn't good for my blood pressure. I don't understand parents who are afraid of teaching their children how to behave.
I found it odd that Shannon was the chef in this episode, depriving the pirate of him as a mentor. My guess is that their guest chef didn't show up, forcing them to switch to plan B.
