I know they have access to hair dye in there. I thought perhaps she would only have professional work done at first - But I just noticed that even her extensions have darker roots. Is it all the rage or something?

Yes, it's a "thing". Think Billie Piper, Paloma Faith etc. Deliberately having pretty dark routes with fair hair is a "look"

It is meant to give your hair depth...well I heard that on TV once.

When she's sitting there with huge bulbous eyes and the hair in her mouth I always think of the movie, "The Ring". Always kinda freaks me a little.

I get that looks more natural with slightly darker roots. I sometimes just use that touch up which gives that sort of effect. But I think hers are little bit too dark and just sort of cut off, rather than blend.
