Tomato recipes?

Has anyone got any good ideas/recipes for fresh tomatoes?
We've grown our own this year and can't eat them fast enough. So far I've made ratatouille and soup for the freezer. Any other suggestions most welcome

How about sun-drying them? My parents do. If you have a greenhouse or conservatory it's dead easy, but you can also use an oven. Tons of recipes/instructions on the web.

How about some tomato chutney? Will probably keep well in air tight jars too.

I use tomatoes almost all the time when cooking: stews, casseroles, chicken, any pasta dish.... everything. I think the only thing I haven't tried it with is salmon.
Putting recipe in brackets because I make my own and never use the same amount of anything, but it always ends up good.

My basic tomato "recipe" is:

chopped tomatoes
finely chopped onions
grated or crushed garlic (I usually use a whole bulb of garlic = ca 8-12 cloves)
grated or sliced carrots (I usually grate, because my son don't like cooked carrots)
salt and pepper
I add lime juice too, from at least 1/2 lime, but I don't think it's neccessary.

I prefer to fry in olive oil (on low), but have steamed too.
If you steam, add the olive oil, salt and pepper when everything is in the saucepan.

Add whatever: all, none, some, or just one:
Fresh basil or oregano (chopped -great with pasta dishes)
Broccoli
Chopped peppers in any or all colours
Cream, sour cream, or creme fraiche (best with chicken and turkey dishes, but goes with everything - do not add until you use the original sauce.)
Any other veg or herb.

Invest in plastic boxes or jars that can be kept in the freezer, and labels, if you need them.
Keep in the freezer and you have healthy meals for a year


ETA: My quickest recipe is pasta, tuna (from a can) and this pasta sauce Add lettuce, spring onions, chives, grated cheese, apple slices, or whatever...

I know their are lots of ideas on the web but I prefer to hear about tried and tested recipes.

I remember this because I saw him prepare it in an episode of his TV series.
Totally simple but he made it look and sound very appealing.

Basic tomato sauce, with onion, garlic, olive oil, tomatoes, seasoning. I like to add bacon with onion at the beginning for better taste. You can take it in a Bolognese direction with a carrot and celery cut in little cubes and added at the beginning. They cook this for hours, but you can get away with just under 1 hour. You do your vegetables minus tomatoes for about half an hour, then add finely chopped tomatoes and give it another 20-30 minutes.

What is also good is a simple salad, cut mozzarella and tomatoes in slices, arrange on a plate, season with salt, black pepper, add fresh basil. Drizzle with olive oil and balsamic vinegar.

I often make this for supper in summer.

It's a Jennifer Paterson recipe. You need quite big tomatoes for it though

I make a simple tomato sauce with onion and garlic. I freeze this and use it as a base for sauces through the winter.

Chilli Jam - ignore the 2 stars, I have made this recipe many times and although not particularly my thing, the jars get cleaned out pretty swiftly.
