Favourite roast?

We always have a traditional roast on a Sunday although we tend to alternate the type of meat from week to week.

Had roast beef today but I have to say that my favourite is pork belly with cracking and apple sauce.

What's your favourite?

Hmm.. tricky.. but think I'd also go with a nice, succulent roast pork with crackling. I also tried making a pear sauce, inspired by the thread on pears. That seemed to work nicely & a change from traditional apple.

But I also love roast beef & horseradish, and a nicely roasted chicken.

I love them all but a lovely bit of beef is my favourite, medium rare with a good amount of fat on it. Although pork and crackling come a very close second.

I'm drooling now. Luckily, eating low carb, I can have plenty of roasts, but unfortunately not the roast spuds and Yorkshire puddings to go with them...boo!

On the whole, chicken, stuffed (including the main cavity) and cooked only until the meat is succulent and juicy. Dry chicken is fibrous and horrid.

Also love roast beef, but it has to be a rolled sirloin or a wing-rib, with plenty of fat and marbling.

I love pork belly done as a one pot roast, its nice and cheap, very soft and yummy crackling

Lamb or beef.
Most supermarket pork and chicken isn't worth eating ..... unless you go for the super-expensive free range organic.

They're all amazing!

But I like to mix it up, apple sauce, cranberry sauce, mint sauce, bread sauce, go with all roast meat, like apple sauce is really nice with lamb, not just pork, mint sauce goes on every roast.

I don't like horseradish though. What's the nicest horseradish you can buy? I'd like to get into it.

* For some reason we've got into the habit of pronouncing "beans" in the style of Gollum, which has occasioned a few odd looks in the supermarket.

Doesn't matter what meat/poultry/game it is, there has to be roasties

I won't eat duck. Too many fond memories of feeding them bread in the pond at the local park, as a kid.

You won't eat duck, but other animals are OK to eat? Strange.

Anyways nut roast for me with vegan Yorkshire puds, Red cabbage and sweet potato mash. Yum!

A huge great big no no is having yorkshire puddings with all meats. Yorkshires should only be with roast beef

People keep saying that it's possible to cook turkey in such a way that it remains moist throughout. I'm sure it's true, but I've never experienced it myself. I'll never choose the turkey if there's another option.

Cook it long and slow, oven no hotter than 120 degrees (preferably 100-110) until the thickest part reaches about 60 degrees. It should still be moist throughout and will keep hot while it rests and you do all the bits needing a hot oven like yorkies and roasties. Not good if you need dinner at an exact time though as you never know how long it will take to cook.

As for the original question, can't beat beef (again, long and slow makes it most tender). I've never been successful with gravy without the help of bisto.

You should try it, duck's damn tasty!! Mmmmm, duck pancakes with hoi sin sauce.
