Hehe my gran was like that. She was a farmer's wife all her life and killed hundreds of poultry over those years because they always served the christsmas demand.
No stunning in those days either - it was throat slitting and bleeding them out alive.
But she could never kill ducks.

"They look up at you with those black little eyes, and they KNOW"

That's what she used to say.
No problem with chickens, turkeys, geese or guinea fowl though.

If i'm out I will usually choose lamb. If at home you can't get better than medium rare roast rib of beef with horseradish and all the trimmings.

That reminds me of my Gran, she kept hens for eggs, & when they stopped producing, it was time for the pot, she would wring their necks, it was over in an instant, & then cut off their heads.

I remember one time, my sister & i were running around & playing, & we saw this hen with its butt our a bucket, we decided it was stuck, & went to resuce it LOL picked it out the bucket, only to find it had no head LOL We were only about 6 & 8 years old.

A big baked ham is my favourite sunday dinner. All sticky and glazed with something rish and spicy, the meat pink and so moist in lovely thin slices. Maybe with roast sweet potato's, a bubbling dish of cauliflower cheese and something fresh and green. And there are no better leftovers.

I love a ham too. There's no better sandwich than one made with leftover ham, sliced tomatoes and wholegrain mustard. I'm craving one right now!

The only time I have ever felt bad eating a meal was sitting on the terrace of a restaurant in Bordeaux overlooking the river, watching the ducks swimming past...while eating the speciality of the house, duck heart salad. About half-a-dozen duck hearts in fact.

My great-Uncle was a gamekeeper in Scotland, and one of his jobs was keeping the rabbit population down. He used to keep all the dead bunnies hanging up on a washing line in the back garden, waiting to go to the butchers. Some were already peeled.

Best thing to serve with a baked ham is Cumberland Sauce, which I think is port wine, redcurrant jelly and orange juice.

Ooh sounds nice. I like it with old fashioned parsley sauce- made with so much parsley that the sauce is a vivid emerald green. Yummy with mash and broad beans,

That looks lovely. I'll definitely be trying it next time I do a ham.
