A creamy bed of "Smash"mashed potatoes.
Crushed boiled Jersey royals gently "folded" in - not "stirred".

An Irish salad as my dear old Mum called it.

For me is would be:
bread (I use hovis wholemeal)
bacon fried to a inch of its life
fried egg = sandwich heaven.

Or
chips
fried egg
baked beans

Or
sliced cooked chicken or turkey breast
a wrap/tortilla
a good dollop of mayo or sweet chilli sauce

Or
cooked pasta
tinned tuna
a huge dollop of salad cream

or
ice cream (prefer chocolate flavour if I can buy it)
strawberries
cadbury's flake crumble over the top (I know it a pudding but its ate alot here)

A fave of mine used to be:
Two slices of Mothers Pride spread with mayo - Smiths Square Crisps carefully overlaid like roofing tiles on one slice, place the other slice on top then press gently with the palm of your hand.
Crunch!

That reminds me of an old favourite. Except my condiment of choice was mango pickle (not the chutney, the pickle).

1-mince,2- pack or tin of mixed veg, & 3-some mash You have shepherds pie, Add an onion & some gravy powder, which will not count against the 3 ingredient rule, as to me, they are condiments.
