meal ideas please

Hi all, I'm after some dinner ideas for myself and my 3 year old son.
My son is a little fussy, he doesn't eat much meat just chicken and sausages but he loves all kinds of fish.
Mince or red meat I just can't get him to eat.
I'm in recovery from an eating disorder and I want to be able to make a dinner that we can both eat. I actually like anything so I'm easy to please but I find it a bit overwhelming and feel a bit adrift come dinner time so I want to have a good list of about 8 dinners that I can go to and plan in advance what I'm going to make for us.

I enjoy cooking and actually love food but sometimes time is against me so very simple ideas are welcome.

Any suggestions welcome. Many thanks xx

Fish pie, with a white or cheese sauce (you can use frozen fish, which makes it economical)
Toad in the hole
Sausage and Mash
Roast Chicken (with left overs, Chicken pie, or Chicken with bubble and squeak)

Hoped he would A possible way to introduce mince, fry off some mince,and then add finely chopped veg, I then add low salt gravy granules for a quick gravy, and then pour into already cooked Yorkshire puds.

Kids love finger style food so try fajitas or tacos. He'll love rolling the wraps and you can make yours healthier and more substantial with some green salad

You can also use turkey or chicken mince to make spag bol if he doesn't like red meat

A few years ago I invented a sausage casserole that sounds odd but tastes lovely. Cut up some sausages into chunks, chop some onion, garlic, leek, cauliflower and salad pepper, and cook it all slowly with a tin of chopped tomatoes for a few hours. Serve with rice.

It's one of those things that works a lot better in reality than on paper.

Fish fingers made with fillet of white fish(can use frozen fillets thawed) .Cut into strips dip into egg, breadcrumb and oven bake.Serve with chips made from potato cut into wedges rolled in veg oil and baked above fish.Salad or any other veg to accompany it.

chicken or fish tacos are easy & economical if you make your won taco seasoning. Fish fingers will work as a taco filling, if you both like fish fingers.

Try writing out a meal plan for 5 or 6 days, then you don't have to think about what to make that night, as you already have it written down. You can also do your shopping then, based on the food for the week, & get any prep work done the night before of morning before work. I find it makes my life easier.

Oh & if you like cold chicken ( I love it) cook extra chicken so you can it warm one night & use it cold the next night. I often cook extra foods such as a soup or casserole that will be useful for more than one night, it doesn't have to be the next night, you can have it 2 nights later. Tortillas make great & easy wrap meals

Simple tomato pasta with salad

Tarka daal with rice (cheap recipe on the BBC website)

Risotto

Falafel or veggie burgers in pita bread with fresh colourful salad

Veggie mince for spag bol.
