healthy chocolate fudge brownies with mung beans?
Has anyone tried this? Looks good but I'm not sure, I tried sweet potatoe brownies and they weren't very good.

I just don't see the point of 'healthy' cakes/biscuits etc. As long as it's in moderation, just have a normal one. If you're on a diet or a healthy eating plan, have one as a very occasional treat or avoid completely.

Depends on why you want 'healthy' I suppose. I'm diabetic so I wouldn't use maple syrup (use a stevia based sweetener instead) and dates are very high in sugar - though it works out less than one date per cookie. I suppose if you use very high cocoa chocolate as the chips (as the blogger suggests) it would be ok.

That recipe doesn't have wheat, eggs or refined sugar, so if you were avoiding those then it's a win. Also, it appears to be vegan. For everyone else, if you wanted some extra fibre or another serving of vegetables, then this is a treat for you.
I wouldn't have expectations of classic brownie, though. Maybe you need to revise your hopes, OP, before doing up a batch. |
