Chorizo - use by date

I've found two forgotten chorizo rings lurking in the fridge. They won't have been in there all that long, so I was surprised to see that they're both past their "use by" dates. One is last month and the other a date earlier this month.

I would have thought that this type of food, cured meat, should keep for many months. They're still in their sealed packets, but not vacuum packed. I intend to eat them if they smell and taste OK. Do you think I will die?

I've found this now. It looks nice and dry inside the packet, so sounds like it should be all right.

Wrap cured chorizo in a tea-towel and keep it in the fridge - it should last 6 months in good condition. Wipe off any mould like any Spaniard would...and Enjoy!

I'd want my tea towels to last longer than 6 months!
If you're looking for a recipe with chorizo I recommend this - I've made it three times in the last few weeks:

Don't worry about having coconut oil - use whatever oil you have available.
I substituted paprika for pimento and the jars of peppers are available in Sainsburys.
They're simply red peppers de-seeded and preserved in olive oil.
Use the oil in the recipe but cut back a little on the stock.

That's very similar to one I do with chicken & chick peas (ch-ch-ch), think it might be this one

I also do a chorizo/tomato/onion/butter bean salad with sherry vinegar dressing which is lovely warm or cold, but have had so many home grown veg to use over the summer that I haven't made that for months. Hence they got forgotten in the fridge.

Either way I will play safe and cook it rather than nibbling it cold

I saw them in Sainsburys £2.50 a jar ,then I was in Lidl on Friday and they were cheaper in Lidl and in a bigger jar containing more(I'm certain they were just over one pound a jar).

The jarred roasted peppers are often available in discount stores like B&M or Poundland. Useful store cupboard item, I use them in quite a lot of things.

I agree they're a lovely store cupboard staple. Very often though they're stored in brine, not oil. It gives them a very different taste, well to me anyway.

This week I added a small jar of sundried tomatoes along with the oil to the recipe I quoted in post 4. Spotted it at the back of the cupboard.
I also added a pinch of chilli powder along with the paprika.
