I think she works at Adam's in the city centre. Check the photo of the kitchen team on the website.
Adam's is an excellent restaurant.

It's apparently Adam's, according to BBC West Midlands facebook.
It's clear to me that Marcus identifies promising contestants, and those who are at least going to make for good TV. And that colours his appraisals - which is why there are so many disagreements when it comes to critiquing the offerings (the other two are being more straightforward).
