I don't! For Christmas you cannot beat carrots really gently boiled in clementine juice, they are devine! In fact, I shall be scoffing them on Sunday!

They are delicious, one thing to remember is that the fruit juice boils at a lower temperature than water so they take much much longer to cook, I allow 2 hours on a low slow simmer, that really allows all the flavour to get into the carrots.
