Sweetbreads is pancreas isn't it? Anyone on here tasted them?
I have, once, in a 1 Michelin star restaurant. Part of a lamb dish. They were cooked properly and delicious but I have always liked offal. Never had brains or heart though.

I hate to say it but I think the presentation could have been absolutely perfect that sand box would just put me off. It did detract from the actual piece I thought. But good on him for staying though. Lets hope he keeps to plates from now on.

Brains are absolutely gorgeous but difficult to find on a menu these days even in france

I have cooked sweatbreads ages ago when I was at college. Seem to remember they had a slightly livery taste but it was years ago now. I think one of them is the thyroid gland
