Why? It is an industry standard machine. Being shown how to use these things saves an awful lot of trips to A and E clutching your severed fingers in a clean tea towel (especially as some of this lot cannot even use a sharp knife). Sadly people simply do not understand how dangerous some kitchen equipment can be and I say this as someone who had to deal with all the accident reports coming from school kitchens.
