Can someone explain bone marrow to me in this context?

Do you literally scoop it out of the bone and eat it? What animal is it from?

Usually beef bones, the marrow spread on toasted bread - absolutely divine

Usually beef and it is one of the most nutritious foods known and, as such, very highly prized. if cooked right, it is meltingly smooth
