Saw a cookery programme on one of the Freeview food channels the other morning and Paul Hollywood made a breakfast pie. Looked nice and some truckers who tried it said it was very good. He had a big deep dish and lined it with pastry, then the bottom was covered with hash browns, then cooked rashers of bacon, cooked sausage sliced length ways, scrambled egg, mushrooms, black pudding slices, tomato etc etc. You can put what you want in but everything was pre-cooked. Then pastry on top then bake it. Must make one sometime as he said it's very filling.

Sounds yum, minus the black pudding, and add some cheese.

Oops sorry, forgot, he put grated cheese on top just before the pastry top.

I recall once seeing a Breakfast Pie where a fried egg was served on the top of the pie.

I do this. Shortcrust, blind baked half way. Potato slices par boiled. Chopped streaky bacon, cooked with onions and mushrooms. Shredded cheese, usually a mix of something like chedder and mozzarella or swiss.

Layer it all into the pie plate and pour over a basic 2 egg + pint of milk custard seasoned with salt, pepper, cayanne, and mace. If it doesn't cover the solids, add enough milk to make up the difference.

Bake in a pan of water 350F for around 45 minutes.

It's a great way to use up odds and ends.

Scottish Asdas do Breakfast pies (the manufacturer's name escapes me) and they are, to me at least, vastly disappointing, not very flavoursome and a touch dry.

Mmm - doesn't sound like it would be any more tasty than a full English, but more time consuming and faffy.
