Martin behaved badly because he ignored Scarlets request to collect water. And the camp kept running out of water.
That process of politely and reasonably asking by Scarlet, and disrespectfully ignoring her by Martin, had been happening all day, but wasn't put into the edit, so we didn't see it.
Danny Baker had had enough of it, and being a man of principle he told Martin what he was doing wrong. Danny is a much stronger and honest character than Martin, and Martin is a bit of a weasel (All that passive aggressive nonsense he comes out with when under pressure).
Martin behaved very badly for the whole day, which was confirmed in the Bush Telegraph by the camp mates after Danny let rip. No one said Danny was wrong. Everyone who expressed an opinion said that Martin had been ignoring Scarlet all day.
My understanding of the chores is that once they are handed out by the camp president, no one else is allowed to do them. So Martin agreed to be water carrier before he had to do a bushtucker trial, and knew that he still had to fetch water after doing the trial. If someone else did the water instead of Martin, there would be a forfeit, like they may lose a star and therefore eat less.
That's why Martins behaviour is so bad. He knew he was the only one allowed to fetch water, but he continually refused to do it all day.
The camp presidency is designed to create this kind of tension, other wise all the lazy people would be able to get away with being lazy, and ITV would have less to show in the main show.
Martin is lazy, he's a whinger too, he whinged constantly during the Bushtucker Trial, and Martin has a sense of entitlement that doesn't exist in the camp. He needs to grow up, or go back to the Versace.
