Here in Spain they are usually kept in a garage or similar on the wooden holder covered with a net bag or tea towel. My friend hangs his from a hook in the ceiling cover with the bag.
I will admit I am veggie but even if I wasn't I could not eat this - the smell really puts me off it and when we go in Carrefour I avoid the aisle where at least 100 legs are hanging as the smell is overpowering - even my meat eating husband will not go down there.
