I think so, you'd need to protect it against mould, but the whole point is that meat was cured in the days before refrigeration in order to preserve it through the winter.
As I am curing quite a bit of meat at the moment, you'd be surprised how long you have to 'air dry' ham before it's even ready to eat.

They recommend 4 to 6 months after curing for a Yorkshire ham (dry cure) before it's even ready to eat. Prosciutto is 12 months.

Bacon is air dried for a minimum of 10 days but can be up to 3 months and still be safe to eat, though 28 days is pushing it just about its limit for my choice of flavour.
Hmm, so in theory I could buy a 7kg leg for "Christmas" and then nibble on it for a couple of months. That actually sounds quite nice. Would I have to keep it wrapped up in the fridge or could I just leave it lying around loosely covered to keep the flies (and the wife) off?

Ideally you keep it in a col dry place, I air dry stuff in my fridge open covered in a cloth. But it will keep for a long time, you supposedly cloud keep it in a garage or well ventilated room, just ensure in warmer weather it is covered to prevent flies.

Here in Spain they are usually kept in a garage or similar on the wooden holder covered with a net bag or tea towel. My friend hangs his from a hook in the ceiling cover with the bag.

I will admit I am veggie but even if I wasn't I could not eat this - the smell really puts me off it and when we go in Carrefour I avoid the aisle where at least 100 legs are hanging as the smell is overpowering - even my meat eating husband will not go down there.

The advice is to lightly smear the exposed meat with olive oil and cover just that area with clingfilm.

Oh dear, it must be quite upsetting to be confronted in the butchers section of a supermarket with a symbol of where meat comes from.

Welcome to the real world, meat does not come from prepackaged sources. That nice steak you enjoy, it came off a cow. Get real, grow up or turn vegan, all the more meat for me then.

It tastes delicious, but I know what you mean about the smell. I don't find it pleasant at all, but I love the taste - it's a bit like stinky cheese in that respect.
