Fat is where the flavour is. Cooking meat without it makes it less tasty. I'd recommend to try it once, throw away the fat after the meal is done if you have to.

I prefer the dark meat myself.
Turkey legs, breasts, etc. are good prepared in a slow cooker. You can google for recipes. The slow cooking is good to cook the breasts; it turns out very tender! |

My local butcher sells boneless turkey leg which I used to in place of pork in a pulled turkey recipe in the slow cooker. It shreds up nicely.
