When we watch the results show on Sunday night, it is correct that their dance in the main show was 'last night'? It is recorded in the context of when it is going to be broadcast. That isn't a pretence, it is a reflection of reality. What I don't understand is, why does it matter so much to you. What difference would it make to your life if they said something on the lines of 'when you did your dance'? You could argue that, on the basis that it is recorded on the Saturday, Tess should actually say 'when you did your dance earlier this evening' except, as it is being broadcast on Sunday, that would sound silly.
