Bread sauce or cranberry sauce

I'm old school, always make my own bread sauce. Never fancied cranberry sauce with fowl, which is rather silly, given that I couldn't eat pork without apple sauce, lamb without mint, or beef without mustard.

What's your preference?

Goes nicely with a spot of cheese too P.

my recent favourite stuffing is sage and red onion

never had it with cheese but will give it a go! cranberry sauce is really versatile,weirdly it's lovely with lamb chops! I used to make a hot sauce out of the meat juices of the lamb some cranberry sauce and some veggie water then reduce it till it's just a bit more liquidy than a glaze absolutely delicious!!

Wow you like your gravy on the thick side huh?
Well it's liquid when it's hot but because it's made with the meat juices and stock from the neck when it's cold it solidifies.

I once saw my friend make gravy for a roast chicken, their method was to pour all the meat juices down the sink, boil a kettle and add the water to bisto granules. Unspeakably revolting.

*Shudder* I pride myself on my gravy and yes I know what you mean about the stock solidifying. My mother always maintained that the natural gelatin in her chicken stock gave us out abundant hair and strong nails!

For Christmas dinner definitely cranberry for me.

I prefer bread sauce with game and (oddly) pork.
Got to be homemade breadsauce too as the packet imitations are revolting.
I let the onion steep all day as I like it strong.

Milk, onion, cloves and a little mace. Simmer together (I do at least 2 hours) sieve to leave just the milk, add breadcrumbs a little at a time on a low heat - be careful how much breadcrumb you put in because it thickens up quickly. Finish off with a large dollop of double cream and enjoy

How do you make your bread sauce? I love bread sauce.
Onion cut in half. Stud with cloves (about 10). Put in a pan with milk and a bay leaf, and bring to the boil, simmer for a couple minutes and remove from heat. Cover with teacloth and leave to infuse for several hours. Basically the longer you do it the stronger the flavour will be.

Strain it, keeping the milk. Throw the onion and bay leaf away.
Put milk back in the pan and add breadcrumbs to the milk (don't overload as they will swell) and add a chunk of butter and a dollop of cream. Put over a low heat and stir gently until it is thickened and heated through.
