I do believe it was Tony Hatch, who also wrote the Neighbours theme.

i have a Tony Hatch cd with the original Crossroads and Emmerdale themes on it. Both have these have been reworked over the years.
Coronation Street has been slightly reworked since the beginning but not that much.

Hmmm "Born With a Smile On My Face", "We'll Find Our Day", "Benny's Theme", "More Than In Love" and "The Summer Of My Life" ...all from Crossroads, all his doing (co-wrote in some cases but still!)

All very, er... Interesting.
