Unusual chicken recipes needed.
It is likely that there will be a surplus of chickens for sale in the next month or two - so they may be going 'cheap'.
As I'm making a half-hearted attempt to economise at the moment, I feel that I should take advantage of this. Although chicken is a favourite of mine, I'll get bored of it if just roasted or made into chicken curry. For example, what would "char siu" taste like if the pork were replaced with chicken? I think it is worth a try. Any other ideas.

funny i was thinking of getting chicken this week too, there will no doubt be some cheap offers

Poulet au citron!
Chicken pieces, half a glass of white wine, half a glass of lemon juice, salt, pepper. Brown chicken in oil or butter (!), add lemon juice etc - simmer until chicken is done, thicken with arrowroot or cornflour (don't want it too brown). Very nice! Add more wine if it looks too dry. |

Cut into strips if using breast, but small joints work well too.
Mix up the juice of 2 limes & 1 lemon, garlic, chili powder & balck pepper and olive oil. Marianate for as long as posible. ( 3 hours minimum) I like this on a Bar B Q, but is lovely cooked inside. Serve with jacket potatoes & Salad PS its a really tangy chicken that makes your maouth water as you eat it & leaves a bite afterwards. |

Chiken paprika is lovely and dead easy, chicken works ok in place of beef in a stroganof, coq au vin is a classic, chilli made with either minced or cubed chicken is good, adding chicken to a roasted vegetable pasta bake works well, jerk chicken is dead easy if you have a blender, stuffed chicken breasts wrapped in pancetta are a nice alternative to roast.. I've got loads if you want the recipe to any of them just ask.

My favourite thing to do with chicken is the following:
Take one large, plucked and dressed chicken. Insert 12mm diameter wooden dowel into the parson's nose, pass through the chicken so that about 300mm protrudes from either end In a large container (large enough to take the chicken and dowel) place: 250 ml of light soy 250 ml of rice wine or dry sherry 5 chopped garlic cloves 20 mm piece of fresh ginger, grated 5 ml spoon of chinese 5 spice powder 5 ml ground white pepper Cover and marinate overnight Light a barbecue and wait until the coals have turned white. Brown the chicken on all sides, then raise the grill so that the chicken cooks thoroughly without burning. Using a skewer, pierce the chicken near the leg, if the juices run clear, then it is safe. Take chicken from barbecue Remove dowel Throw chicken in the bin Eat the stick IMO chicken is nothing more than a feathered rat |

![]() That should use them up! I love Harry Hill!! Can't believe the series has ended....boooo. Anyway, chicken recipes - there was this good one I tried on the back of a porridge oats packet and its basically chicken with a white sauce with some peas and carrots and then topped with a crunchy porridge oat topping. Its nicer than I just typed. |

Most dishes that require pork can be substituted with chicken so chicken char sui would be fine.
If you are budgeting, this is a good mega cheap recipe ...... Chicken Tinned chopped tomatoes Garlic Herbs (oregano or basil or mixed) <or you could just buy tinned toms that have garlic & herbs in> Water (eyeball amount, its just to make up the sauce amount) Red Pepper Onion Start to roast chicken Chop onion & peppers and saute Add garlic (if using fresh) When sauted nicely, add tinned toms & herbs and let simmer for about 5 mins When chicken has cooked for about half hour, pour over chicken and bake til cooked Serve with boiled rice. |

Crumble: 300g/10½oz plain flour, sieved pinch of salt 175g/6oz unrefined brown sugar 200g/7oz unsalted butter, cubed at room temperature Knob of butter for greasing Filling: 450g diced chicken 50g/2oz unrefined brown sugar 1 tbsp plain flour 1 pinch of ground cinnamon 1. Preheat the oven to 180C/350F/Gas 4. 2. Place the flour and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs. 2. Place the chicken in a large bowl and sprinkle over the sugar. 3. Butter a 24cm/9in ovenproof dish. Spoon the chicken mixture into the bottom, then sprinkle the crumble mixture on top. 4. Bake in the oven for 40-45 minutes until the crumble is browned and the chicken mixture bubbling. 5. Serve with thick custard or gravy. Et voila. Delicious chicken crumble.
