What is the expected charging time for my ipod, the battery life isnt that impressive and now seems to be taking a long time to charge.

It may say the battery is full, but Apple suggest you leave it charging for the full specified time. I often remove my iPod from charging after 2 hours, like you
After a 2 hour charge I'll get about 8 hours out of my Shuffle.
