Put the CD into your PC, let iTunes find it and get the album / track info from the internet.

Click on the CD in the Devices section on the left, then click on the Import CD button (bottom right in iTunes 7).

Alternatively, sellect all the tracks (CTRL-A) then right click and select Convert Selection to ACC.

Once they are imported into your iTunes, delete them from any other place you have them stored except from the

\Itunes\music library ..... folder

You already have them digitised? Then it's just File / Add folder. But as the post above says, it would be better to arrange them all into a single folder tree before importing them all.

Just select them and drag them onto the iTunes icon.

Here is a related question. If I drag n drop my whole music collection (all in individual album folders) will iTunes move them all into the iTunes folder?

Essentially, I want all my music (120 gigs) to show up in iTunes, but not if it re-arranges it all into one big folder.

By deafult it won't, you can copy them if you want using Advanced > Consolidate Library though. If you choose to let iTunes put it in its folder it will still use subfolders automatically (iTunes Library>Artist_Name>Album_Name>track.mp3 IIRC).
