um, thats about it - how do you go about switching from a mobile with a contract to pay as you go with the same mobile?

First off, get a payg sim card, then ring up your current operator and ask them to terminate your account with them. Make sure they give you a PAC code, once you have it, ring up your payg operator then give them your old mobile number and pac, and they'll transfer your number over.

You may not need a new sim card if you are wanting to stay on the same network, just drop to PAYG, then ask them to make your contract sim card into a PAYG one after your months notice.
