I have a 42" LCD and when there is fishing programme on or anything with an expanse of water, the screen goes very pixellated with noticable squares. Is this normal?

Easy answer - don't watch fishing!
It's probably down to the excessive MPEG compression uses, there's far too much movement in the water for MPEG to cope.
Sounds like you are viewing a channel with a low bitrate, what channel(s) are you having problems with, are they SD/HD?
This problem is more likely to occur on SD channels, but if you are having problems with any HD channel(s), then I would have to say it's more than likely to be the processing within the TV that is at fault.
