I can't answer Craig's question, but thought I would try to provide some useful input.
People with a computing background should recognise that "host" normally refers to
a computer in a network of devices.
For example, in a USB system, the "host" is
normally the computer.
To the USB host you can connect a number of USB devices, such as mice, keyboards, and mass storage devices such as hard disks, memory-card readers.
Normally an MP3 player will act as a USB
device.
It appears that the Creative ZEN Vision:M 60Gb MP3 player has a "USB
host" feature which, when used with the correct cable, allows the ZEN to act as a "USB host" rather than a "USB device".
The purpose of this appears to be to allow the connection of certain USB devices, such as digital cameras or card-readers, directly to the ZEN. This should allow files to be copied between the ZEN and the device, for example to make a backup, without needing to involve a computer.
I don't know how this feature works, I don't know if it will work with a mobile phone. It appears to have been tested only with digital cameras and card readers. The only advice I can give Craig is to read the instructions in his ZEN user manual.
The page on Creative website about the ZEN Vision:M seems to be here:

The package contents page indicates that the 60Gb version is supplied with a "USB Host Cable".
