Tuna Cakes With Spring Onion Salsa
TUNA CAKES WITH SPRING ONION SALSA
400g (14oz) potatoes, peeled and diced 185g can tuna chunks in brine or spring water,drained and flaked roughly. 1 teaspoon lemon juice 1 teaspoon olive oil Salt and pepper For the salsa 4 spring onions.chopped finely 5cm(2 inch )cucumbers,seeds removed and flesh diced finely 1 teaspoon lemon juice [LIST=1][*]boil the potatoes in lightly salted water for 15-20 mins until tender[*]while the potaotes are cooking,in a small bowl mix together all the sals ingredients and leave to marinate.[*]when potatoes are cooked,drain and main them,then stir in the tuna the remaining lemon juice and season to taste. Divide cakes into 8 and shape into small cakes[*]Heat the oil in a large frying pan and fry the cakes for 3 mins then gently turn and cook for a further 2 mins[*]serve 2 tuna cakes per person with salsa[/LIST] |

Your recipe sounds excellent, thank you for sharing it!
Although personally, I would only add pepper, but not salt, due to an unfortunate intolerance I have against foods that are very high in salt! ![]() I think that next time I arrange a food buffet, I might make some tuna cakes with spring onion salsa, based on the inspiration of this thread!
