Mincemeat Crumble Cake
(serves 12)

Prep time: 10 minutes
Cook time: 40-45 minutes
This will keep up to 2 days in an airtight container and can be frozen!!!!!!!!!

265g plain flour
125g soft light brown sugar
1x100g pack ground almonds
225g fridge-cold butter
700g good-quality mincemeat
75g pecan halves
icing sugar, to dust
You will also need:
a 8in square baking tin and some baking parchment


Preheat the oven to 180C and line the tin with the baking parchment. Cut it so it runs up the sides of the tin at the two ends, making it easy to lift out.

Put the flour, sugar, and almonds into a mixing bowl, cut the butter into chunks and rub it loosely into the flour with your fingertips. Stop when the mixture resembles coarse, fresh breadcrumbs.

Tip two-thirds of the crumb mixture into the baking tin then gently flatten it to form a thin base, pushing it well into the corners. Firm the base gently, but don't compact it too much otherwise it won't be crumbly enough.

Tip the mincemeat on to the crumb base to cover it and then scatter the remaining crumb mixture and the pecan halves over the filling. Cover the mincemeat, but don't pat the crumbs down, keep them loose.

Bake for 45-50 minutes, until the crust is golden in colour. Leave to settle prior to removing it from the baking tin. Dust with icing sugar and serve either warm or cold. Enjoy with a nice cup of coffee or icecream.

If I was going to have ice cream with my mincemeat crumble cake, I would have strawberry ice cream with it.

Mmmmmmmmmnnnnnnnnnnnnnn.

Im currently on a liquids only diet (and loads of pain killers, ha ha, so unfit to be around ovens, knives, anything else, really) but i cant wait to make this.

Think ill add a bit of fresh fruit then DEF serve with ice cream!! Im going to pile on about a stone in a day when i can eat again!!!!
