Hi!

I didn't make that topping in the end, I was too tired so I just used a soya whipping cream instead. Wasn't very good, it tasted a bit, um, ricey? But it was lovely apart from that. One of my guests ate two large helpings so it can't have been that bad! I'll definitely bother to make that topping next time though!

I see what you mean about the quantity - it only uses 1/4 litre of soya milk so I would certainly agree with you on doubling the ingredients. But then I really am greedy!

My nanna, (who is a vegetarian) usually has either a pasta bake, lasagna or fish for her Christmas dinner, along with the usually traditional Christmas dinner type vegetables.
