Rarely eat Chinese these days as I prefer Thai, but when I do it is usually at an 'all you can eat buffet' at the local chinese restaurant. I always head for the sweet and sour pork, honey chicken, lemon chicken and honey sweet potato.

Is there a theme, I wonder?

Singapore Vermicelle without prawns. That is bloody lovely. Other than that, spring rolls, chicken blackbean or chicken chop suey. Fried Rice everytime.

I once worked with a real Northern bloke (think he had a whippet). Anyway, everytime we mentioned having a curry at a Chinese he would say 'Chinese don't do curry' and would insist we were wrong!

Lamb in black bean sauce & steamed Brocolli in Garlic & oyster sauce. Delish and quite low in the old calories too.

I love fried rice dishes, chow mein and beef with green peppers and black bean sauce. However, I've been to many Chinese restaurants and take aways but the chicken always tastes like rubber no matter which Chinese I use Is it something they do with it?

I doubt it. The chicken always tastes fine to me, but then again, I have been known to like trashy food.
