This Christmas I'm making roast duck in a red wine vinegar and redcurrant jelly sauce. With that I'll have roast potatoes and carrots, and either green beans or sprouts.

Turkey, chipolatas wrapped in bacon, sausagemeat and thyme stuffing (with extra sausagemeat put into the mix), parsnips (which I hate but everyone else loves), carrot and turnip, roast potatoes, sprouts and gravy.

Starters will - well I'm not entirely sure what it will be this year, it's usually syllabub or melon or a crumpet with smoked salmon and scrambled eggs or French onion soup but Dad's got some duck eggs this year so I think he's Planning Something.

Dessert will be christmas pudding and I'm making an ice cream cake for a choice, I got the recipe off here

we have a tradition in our hourse of only cooking things we like. this year though there's a bit of an upset, my gran has come to live with us and she likes the traditional xmas stuff (she doesn't actually, but she likes to cook it so we're stuck with it). therefore this year we're having: turkey, chicken, duck, gamon and bacon (joint, and rashers roasted with the poultry). paxo stuffing, giblet stuffing and apricot stuffing. roast taties, roast sweet taties, roast butternut, roast parsnips, par boiled carrots, corn, peast, cauliflour and brocolli cheese, giblet gravey, drippings grave and ketchup (for the 5year old), xmas pudding, chocolate brownies with hot fudge sauce and custard, sausages cooked in drippings, bacon pinwheels, cheesecake
wine, sherry, bailieys
and the ultimate joy is that my main oven has broken down, so i'm using a little top oven that only fits the roasting pan. we're starting today

Why buy goose fat to do the roast spuds when you are doing roast duck? I do roast duck and drain off some of the fat and do the potatoes in that.

Had Christmas Dinner at bro's house for a change. Sis had some personal problems this year. So we had Venison (deer), which is rather unusual since it is commonly Ham or Turkey. Also had some mixed veggies nuked in the microwave. Tall cold glass of Moo Juice (from a cow) and canned instant biscuits that you bake in an oven.

Unlike what sis would do, which when she is done - she can feed a good size army. Lots of pies like the good old American Apple Pie and Pumpkin Pie. Lots of cookies and fudge. Also homemade non-alcoholic egg nog. Heck, I think we gain about 10 lbs when we head back yonder to our home in the sticks.

Sorry I am a bit late, just seen this.

We didn't buy the goose fat, my uncle who is a butcher gave us it, along with the two ducks we had. But I never use the fat from the ducks.

It's going to sound stupid I know but I prefer roasties done in the 'clean' fat you buy rather than fat produced while cooking.

I always find that the tatties come out much more evenly done, really crispy on the outside and fluffy on the inside with 'clean' fat than with 'dirty' fat.

Anyway, it was lovely.

For starters I did Asparagus wrapped in Prosciutto, grilled with a little Parmesan and a Roasted Red Pepper sauce.

Then a crown of Turkey(I wanted beef but was out voted!), with roast potatoes, glazed carrots, sprouts sauteed with chestnuts and a dash of Marsala and a knob of butter, sausagemeat patties, maple glazed parsnips and a pan gravy from the roasting juices. I got the juices by roasting the turkey on a bed of root vegetables, a glass of wine and a couple of sprigs of Thyme and Rosemary.

Home made Christmas pud with Brandy cream and all washed down with two bottles of Bolly.

When we have Christmas dinner, first we prawn cocktail for starter, and drink Buck's Fizz wine whilst we eat our prawn cocktails. Then for the main meal, we we have turkey, mash, roast potatoes, parsnips, sprouts, carrots and stuffing and cranberry sauce. With that, we drink non-alcohol German white wine. Then for pudding, we have Christmas pudding and ice cream!

Would you like any cranberry sauce with that? Or if not, perhaps some apple sauce?
