I love halloumi and many other cheeses but cheddar (mature) is the supreme one.

Failing that, I like boursin or cottage cheese, feta or mozzarella...but for a grilled cheese sandwich, it's mature cheddar.

and this cheese from Asda which has a green rind and has chives throughout, it's lovely melted over toast with some English mustard smeared on the bread.
