Root Vegetable Soup
I just tried some Root Vegetable soup from Morrisons and I want to make my own. I've tried Google, but the recipes contain too many ingredients. Does anyone have a really simple and easy Root Vegetable soup recipe?

Weeelll.... this is off the top of my head here but all I do is chop up the veg: carrots, swede, potato, turnip and cook in enough water to cover them. Add some stock and salt and pepper. When cooked remove half the veg and puree and then add back to the pan of veg. Voila, soup! It depends how chunky you want your soup how much of the veg you puree.

It is the easiest thing ever to cook. You don't have to have loads of ingredients.
When I do them, first I fry some chopped onion (or sometimes leeks) and then throw in loads of chopped up veg (sometimes just parsnip, sometimes just potato and parsnip, sometimes parsnip, carrot, leek, turnip, etc,) and add enough water to cover, a couple of stock cubes, and boil til the veg is soft. I like mine smooth, so I blend it all in the pan with a hand blender, but you could leave it chunky too. |

I made Delia Smith's carrot and coriander soup (recipe off her website) tonight and its was excellent.

I'll make some tomorrow and let you know how it worked out.Mmm, Carrot and Corriander sounds nice! Coconut and Pumpkin is delicious too. |

Another really easy one....
Ginger and Butternut squash... cut the squash into chunks.. and roast with rosemary and olive oil. Meanwhile, chop an onion and a 2 or 3 potatoes, fry until the onions are soft. Add the squash ( including any oil left and the rosemary) cover with a stock, bring back to the boil and then leave on a simmer until the tats are tender. chop about an inch or so of fresh ginger add to the stock. use a hand blender to make it all smooth. Serve witha dollop of creme fresh and some crusty bread ![]() play with the amount of ginger according to taste. |

Easiest - and tastiest root vegetable soup I make is one of Delia's. Chop up a mix of root veg into decent sized chunks, add very good quality vegetable stock (I always use Marigold Bouillon Powder if I'm not making my own from scratch) and season and literally roast in the oven slowly for about 3hrs. Blend and you have a fabulous thick low fat veggie soup.
