Smoked Salmon

We only ever had it at Christmas as a starter, and my mother always just did it with brown bread and lemon juice. I always quite liked it, without being particularly excited about it...

This year, I brought the leftovers home with me after Christmas. I had some yesterday with teeny tiny buckwheat pancakes and sour cream (nice, SO much nicer than with just bread) and tonight I had some with some very thin cucumber (as seen on Saturday Kitchen the other day) - ie pared wafer thin with a vegetable peeler. Oh my god! It was completely different, and REALLY nice. Just cucumber, smoked salmon, some lemon juice and some black pepper.

I'm thinking that I've clearly been missing something all these years.

What ways do YOU like smoked salmon? I still have some leftovers, and now I'm all inspired to try something different with them.

Try adding strips of smoked salmon, cooked brocolli and cream to some hot pasta (spaghetti or linguine). Lovely.

Try smoked salmon and cream cheese in a bagel.
Or bits of smoked salmon in scrambled egg.

I do both of those - and the trimmings of smoked salmon that you can get much cheaper is fine for having with scrambled egg.


And the cat always wants some as well!

I have it every other Sunday with scrambled egg or a bagel.

Funny how people think it's really expensive and then they'll have some bacon which often costs more!

Smoked salmon and butter alone on sliced bread. Food from the gods. I use Tesco Value Slices £2.12 for 200g which seems okay. Its good quality.

I'm not a big fan of Smoked Salmon, but Hot Smoked Salmon is a completely different taste, you should try it if you haven't.

I like it on it's own with a squirt of lemon or in a bagel with cream cheese.

My dad catches wild salmon that he gets smoked. I eat it with lemon and pepper.

One of my OH's favourite is grilled salmon with my special glaze.

1 tsp Tomato Puree
Basil
Dill
Garlic
Paprika
A few drops of Oyster Sauce and Soy Sauce
Splash of Lemon Juice

Brush onto the salmon and then grill. The glaze works well with most fish as it is subtle, if you don't use too much soy/oyster.

Smoked salmon whizzed with Philli, squidged in a container lined with clingfilm and set in the fridge makes a very acceptable salmon mousse.

I love smoked salmon with Philly light on Krisprolls. (crispbread type things but not at all like Ryvita which tastes like cardboard IMO)

I do this too with a bit of honey added to the marinade

I agree.

Bradan Rost (from the Loch Fyne Oyster Bar - probably get it other places too) is absolutely delicious. We often have it in the house.

We have a lovely smoked salmon terrine every christmas, its a baking tin lined with smoked salmon and then filled with a mixture made of yogurt, fresh poached salmon and smoked salmon, butter, lemon and chives, it's lovely served with wholemeal toast.

No one in our house likes honey, though I suppose a little sugar would work just as well. Give it a nice caramelised taste......think I'll have to get some salmon next week to experiment with
