Quick dinner ideas!
This thread is for your suggestions for healthy standby (super-quick) dinners. One of my great failings is my tendency to order a takeaway when I come home late after work, so having some quick dinner ideas to hand would be very useful. Here are a couple of mine:
- The old reliable salad. Useful in summer - less good as the weather changes. I boil an egg, and eat it with lettuce, tomato, cucumber, peppers, scallions, corn, beetroot (mmm) and sliced cold meats. If I have more time (or the inclination) I make a potato salad with boiled new potatoes tossed in Hellman's Extra Light mayo and some chives. - Beans on toast. You know what to do. - Turkey bacon pasta. Put a little pasta on to boil. Grill some turkey bacon and slice it up. Make a tomato sauce of tinned tomatoes, garlic, onion and any other veggies lying about, plus lots of herbs and seasonings. Add the turkey bacon to the sauce. Drain the pasta and toss in the sauce. Takes about 15mins total. Put your suggestions here! |

Stir fry with noodles is a quick meal to make.
I find most things I cook only take about 20-30 mins which really isn't too difficult to find in your day....you'd wait that length of time for the takeaway to be delivered. |

I like to make my own pizza dough, but I always keep in the freezer, a pack of supermarket own-brand pizza margarita - they come in a box of 3 and are very cheap. If I need a quick meal or we get unexpected callers, I pile them with nutritious toppings,mushrooms, peppers,chillies, onions etc. Including the 15 minutes in the oven, it takes less than half an hour from start to finish.
Of course you can use plain pizza bases but they tend to be too thick for my taste. If you like them spicy, spread (exceedingly sparingly) with lazy chillies before adding the toppings.

When I am cooking something like bolognese or casseroles (dead easy - chuck it all in and let it bubble away) I always do much more than a days meal, portion up the leftovers and stick them in the freezer. This will also work with homemade curries, chinese, chilli etc and you can make your homemade ones as healthy as you like, it is also much cheaper.

I made a sausage casserole today. I used passata for the sauce and some mixed herbs. If you have a slow cooker,you can prepare it before you go to work and when you come back it is ready to eat!
