I just got the recipe off a website. But, and don't scold me here, I have tried it and it is good tasting. For BB Gunns - Leave out the "Cheese Product" bit. Use fresh cheese and you'll have a great meal. I actually find the cupping to be really handy. It saves you measuring everything!

Cool. Do they sell measuring cups in Ireland then? I've never seen them in shops here. I really must get some, so I can actually use my American books.

They sure do sell them here Elanor. They are hard to find though. I was luck to have found some. Now I can cook American style

I'm going through a risotto phase too lol.

I just fry a finely chopped onion, red pepper in a tiny amount of oil... add aborio rice, then vegetable stock and sliced mushrooms and cook until the rice is tender.

I think you could make a similar tasting thing (only better) with a good mature cheddar instead of "cheese product" and some creme fraiche and some actual mushrooms instead of the salty soup. I wouldn't like to call it 'healthy' though, with all that fat. I like the sound of adding water chestnuts though - might be an interesting bit of crunch.

I'm currently in a risotto mood. I've had several this week.

I fry a chopped onion in a bit of olive oil, then add arborio rice and fry slightly, then add liquid (last night I added cider, and it was delicious - but it could be white wine, or just hot water and a stock cube, or actual stock, which I had after Christmas from the turkey) and let it cook until the rice is still firm. Then I add whatever - with the cidery one I added loads of spinach leaves (just enough to just wilt them - take off the heat very quickly) and a bit of chopped feta (yes, I know it's cheese/fat, but I only added a bit), or it could be mushrooms, or peas, or mushrooms and peas, or peas and broad beans... or whatever. Cider+spinach+feta is my favourite though.
