Chicken Tikka sauce

Has anyone got the ingredients needed for the yellowish yoghurt based sauce/dip that comes with Chicken Tikka from an Indian restaurant.

I make mine with natural yogurt and add chopped fresh mint or sometimes a couple of spoonfuls of mint sauce/jelly from a jar. I also add a touch of cayenne pepper to give it a bit of colour and 'bite'.

Use ground almonds for thickening.

Search for 'mint raita' but it is generally different to the sort you get from the local takeaway.

This is Pat Chapman's

- 225g yoghurt (Greek is good)
- 1/2 tsp chilli powder (optional)
- 1/2 tsp garam masala
- 1 tsp sugar (or to taste)
- 1 teaspoon bottled mint jelly (or sauce)
- 1/4 tsp mango powder
- 1 tbsp fresh coriander (finely chopped)
- pinch of salt (or to taste)
- couple of drops of green or yellow (or other colour) food colouring (optional)
- 1 clove finely chopped garlic (optional)

just blend it all together

They often just add yellow food colouring in the restaurants.

Yep probably but you'll find most indian takeaways use green or yellow food colouring.

Tell me about it, the last Indian I went to they had a dip that was virtually luminous lime green/blue - very freaky!

Strange isn't it, just like the bright red tandoori dishes. I'm not convinced it makes it look more edible.
