Hi

Im planning a quiet evening in on friday and fancy making my own chicken madras. I normally get the pataks sauce and throw some chicken in however ive just seen a load of lovely madras pastes. What do i add to the paste to make a nice hot one?

Simplest method for madras paste is:

Fry some onion until golden, add a little tomato puree and the paste and fry for a bit more. Then chuck in some tinned tomatoes and cook for a bit.

You can throw in some chilli for extra heat if you want or just add more madras paste.

Maybe add some chopped fresh coriander.

EDIT: The madras pastes are usually fairly hot without any extra chilli but I don't know how hot you want it.

We used the Pataks Madras paste last night and it was lovely and spicy, however we do prefer it hotter so added a third of a teaspoon of chilli powder or dried chilli flakes work well too.

1 large onion - finely chopped
2 tomatoes - finely chopped
1 tsp tomato puree
1 tsp salt
1 tsp turmeric
1 tsp chilli powder
2 tsp madras curry powder
1 tsp garlic powder

Fry the onion in a little oil til golden, add the rest of the ingredients and fry gently for about 3 mins. Add 450ml boiling water plus 450grm meat/veg of your choice and simmer til cooked.
