Fry chopped onions, celery, carrot in the bottom of a saucepan.
Add mince (beef, pork or lamb) to brown
Add stock, any other veg you like, favourite spices, splash of worcester sauce and/or red wine.
Simmer for 20 mins.
Add sliced potatoes, then simmer for another 20mins or until potatoes are tender.

Today I made corned beef hash and it was lovely

Chop potatoes, onions, swede, parsnip and carrot. Simmer until cooked with added stock cubes. When cooked add cubed corned beef and heat through gently

Goulash is a good one pot meal. I do things by eye so am a bit unsure of the measurements but:

This will make about 6 portions (ideal for freezing)

4 large onions, chopped
Enough braising steak/stewing beef to feed 6
1 box of Schwartz paprika (You get 2 sachets; you will want to use both – you can use any of course, just I know how much you get in that box and that’s more or less what you need)
2 tins of chopped tinned tomatoes
2 teaspoons of caraway seeds.

In the pot, fry the onions until they go clear and soft,
Add the beef and fry until the outside is browned,
Once browned, add the paprika and caraway and give it a good stir.
Add the tins of tomatoes and stir again.
Bring to the boil, once boiled reduce the heat and simmer for about 2 hours - 2.5 (but the longer the better). After about an hour give it a stir and if it looks too dry add a bit of water but you should be fine with the juice from the tomatoes.

Make some dumplings (just use the packet mix if you like) and pop them in when there is about 30 - 40 minutes to go.

I also use this recipe for slow cookers - obviously doing the onion and beef browning on the hob before hand and then cook it for about 8 hours on low and the beef comes out lovely.

Here's a couple of mine:

My dhal (not pure but who cares).

Put on some lentils or dried lentil and pea mix to boil in stock. Season.
Fry some onions and mushrooms in curry powder or garam masala or your fav curry paste. Add to lentils when they are getting softer. When the juice in the lentils has reduced a little, add half tin of chopped tomatoes (not ones with basil added) or a couple of chopped skinned tomatoes. Keep tasting. You'll know when it's ready. Blitz some spinach (boil or microwave) and add near the end of the cooking process and some fresh coriander. You can liquidise some of it, if you want it to be smoother. You can add more liquid if you want it to be a soup. Very nutritous and you can miss out the spinach, if you want it to be cheaper. Service with chapati or nan and/or spiced roasted potatoes. You can also add potatoes.



this one is adapted from a BBC recipe:

Rigatoni Sausage Bake (well, it ends up in one dish in the oven!)

Grill or bake some vegetarian sausages and chop them into small pieces. Heat the oil in a pan, add a chopped onion and fry for 5 minutes until softened and lightly browned. Stir in the sausages and fry until lightly coloured.
Add grated carrot, then stir in the 1/4 pint wine, 1/2 pint stock, tomato purée, and season.
Bring to the boil, then reduce the heat and simmer uncovered for about 15 minutes until the sauce is thickened. Taste and season if necessary. Set aside.
Cook rigatoni and when cooked, stir in fresh spinach and then drain. Tip half the pasta into a shallow ovenproof dish. Spoon over the sausage sauce, then cover with the remaining pasta. Pour jar or fresh florentina or cheese or white sauce over food (or make your own). Top with parmesan or cheddar depending on how rich you want it. Bake for 20-25 minutes, until the top is golden brown

Mince and Tatties

Fry onion, carrots and potatoes then let it simmer in a little water, when reduced add your mince. Add stock/gravy if you wish then serve once cooked. You can bulk it out to serve more then one person, with frozen veg and mushrooms.

Easy cook one pot meal. Chicken,tin of condensed Cambells mushroom soup and diced apricots. Cook on hob or in the oven.

Spiced rice - this is a great one for using up spare cooked rice if you do too much.

Ingredients:

Cooked rice - basmati is best (about 4 servings)
1 onion
0.5 tsp cumin seeds
0.5 tsp black mustard seeds
1 tsp salt
0.5 tsp turmeric
0.5 - 1 tsp chilli powder (to taste)
0.5 tsp asafoetida powder (you can't leave this out it won't be the same!)
some oil

1. heat the oil to hot.
2. Chuck in the mustard and cumin seeds and the asafoetida and leave for about 10 seconds or so.
3. Chuck in the onions and cook until they are golden brown (properly golden brown not just a little bit)
4. Add the rice, turmeric, chilli and salt and mix until everything nice and yellow.
5. Heat through and scoff

You can serve this with curries, add prawns or chicken for a quick meal, eat it with lentils, stuff things with it. It really is rather tasty.

Don't forget the ASAFOETIDA! it really adds a unique taste.

Hehe, I'd forgotten it was called that.

It's one of those things that smells a bit gross but adds a unique and essential taste to some Indian dishes. I guess in a similar way to Thai fish sauce does in Thai dishes.

You can get it in the Bart's spice range sometimes or in the Tesco's that have a proper Asian section in bright yellow plastic tubs.

unusual, i used to eat this all the time -

steam a whole cauliflower, when cooked put in pan tin of tuna with tin of mushroom soup, season.

Fry some mince, onions, garlic. Add some beef stock. Add some dried mixed herbs. Then add some frozen peas and a tin of new potatoes. Leave to simmer for about 25 minutes, thicken sauce and serve with some proper crusty bread.

I'm doing one at the moment that I saw on Bill Granger's programme this morning (only I've added stuff).

In a casserole dish, I cooked chopped onion and a bit of garlic in oil til translucent and soft - I added a big slug of marsala, because I think it goes well with onions. Then I added a chopped red pepper, some salt and pepper and a tin of chopped tomatoes. Then added a load of green beans, put the lid on and bunged it in the oven. It's been in there about half an hour, and it smells pretty good. I'm going to take the lid off for ten minutes, because there's quite a bit of liquid in there.

Shoulder of lamb, or a couple of lamb shanks, or pork belly.
Carrots
1 tin butter beans
1 tin harricote beans
A handfull of bay leaves
Pint of stock.
Salt and pepper

Put it all in one dish, cover, bung in an oven at around 150c for 6 to 7 hours. Pick out the bones if lamb used and serve.

All Day Breakfast/omelette

Fry sliced sausages; add bacon and fry.
Add anything else you like
Add beaten eggs (+salt & pepper) and cook until done.
