I'm sorry - I'm going to post my lunchbox link again.

I always used to have a sandwich from our work canteen. I found it so dull and boring, and I felt really lethargic in the afternoons. I bought this lunchbox in August, and I've used it nearly every day since then, and mostly I've had very healthy stuff (not always) and I've saved loads of money, and been far more interested in lunch, and had loads more energy in the afternoons, and lost quite a lot of weight.

I usually have at least three portions of fruit and veg in my lunch, often more. I've almost stopped eating bread, although I have it sometimes, and have switched to things like wraps, rice salads, quinoa (I love it!) and lots of salad and fruit.

If you're tired of wholemeal bread, why not try wraps, or bagels?

If you're tired of sandwiches, theres always soup, pasta salad, cous cous salad, salad bowls, baked potatoes.chicken pieces, sushi etc one of my favourites is tuna with mixed beans and red onion.

If you have access to a microwave then leftovers can be really good, stews for example, they taste even better the day after.

If not then take a thermos, you can put various things in it, not just soup, hotdogs and beans, stew, fillings for burritos, macaroni and cheese etc.

If you want to stick with sandwiches, vary your choice of bread, ciabatta, olive bread, foccacia, soda bread etc and salad, different varities of lettuce can make a real difference, also add some other veg, roasted peppers in balsamic vinegar are nice as is avocado..

Also relishes, different types of mayo and dressings can make a big difference.

I've rambled on long enough now, but if you want specific sandwich, salad ideas, let me know your likes and dislikes and I'll see what I can come up with.

Wow, your lunches look great, but I'd probably get sick of all that healthy stuff!

How long does it take you to prepare? Do you do it in the morning before work or the night before?
I don't think I could drag my lazy arse out of bed and prepare lunches like that

well it tends to be finished off well before friday! in general, 2 rolls a day, so 5 rolls is more or less 3 days of lunch.

i'd happily eat one that had been in the fridge from sunday to friday though. the only thing that could go off would be the smoked salmon that i use but i'm certain that keeps for a week in the fridge, in fact i had a google and found http://www.querycat.com/faq/6afac5e6...a8c324cb6f2c8e

I love bagels, especially the seeded ones - putting all sorts of stuff in them and dunking them in sauce.

The bread I like is the seeded stuff, like this: http://www.burgenbread.com/

I am in awe!!
You have inspired me to go out and buy a lunchbox and start making healthy lunches!!

If you are on a diet, it would help you to lose wheat bread and wheat pasta.

I take a packed lunch in.
I normally take left overs or make a spanish type omelette, with veg and ham. (no potatoes but you could) and a smoothie. If you make a big one it will last 2 lunches.
I had ratatoute today, with some parma ham. It was fab!

Thanks for the comments on my lunches! I got the box here (and yes, they do other colours!)

http://www.beckyandlolo.co.uk/depart...aptop_lunches/

What I like about it is that the small compartments keep different things separate, so that a tiny bit of leftover dinner can become a bit of lunch tomorrow. If I just had one big lunchbox that wouldn't be practical. The small compartments also come out, so you could put in something bigger if you take one or more of them out. That also means I can take one (eg nuts and fruit) out for nibbling on during the day.

I find it doesn't really take me long to prepare at all, depending on what I have. I usually do most of it in the evening while I'm preparing my dinner. I don't think I could do it in the morning.

I've found that even when some days I've thought I've got nothing suitable to put in it, and I've thought 'oh sod it, I'll buy a sandwich' that I've then looked in the fridge and found small quantities of things that soon fill up the box. It's definitely an easy way of getting more fruit and veg. In summer I sometimes took in nearly all fruit...

I'm going to get some more inner boxes, I think, so I can make spares of things to have in the freezer.

I'm ordering one of those I've been eating really healthy recently, and this will save me some money, rather than eating out all the time! I'm quite excited

Hehe!

If any of you do get one, please post some photos too! I'm really nosy about other people's lunches now.

Actually, there's a really cool Flickr group for my box (which is what inspired me to get one in the first place) - have a look there for more ideas. Everyone there seems to have their own slant to how they do their boxes, and I've got loads of new ideas from seeing other people's lunches.

Hi Elanor - have had a look at your Flickr lunches page. All your lunches look delish. But where do you get your chick pea pate from? It sounds (and looks) lovely.

Oh, the chick pea pate is lovely! I get it in Tescos (but I think other places stock it too). It's made by Cauldron, and should be in the chiller cabinets near the meat pates, or possibly with the organic/veggie things.

It's this one:

http://www.ciao.co.uk/Cauldron_Organ...Review_5706288 (ignore the photo - it's wrong, it's definitely not the black olive pate.
