healthy packed lunches to take to work
any ideas? i usually make myself a sandwich for lunch.. usually wholemeal with turkey/ham or chicken with salad... but its soooooo boring! i am on a diet which makes it 10 times worse.

Chicken with mango salsa sandwich.
Peppered beef sandwich with horseradish cucumber and creme fraiche sandwich tomato salsa sandwich with chilli moroccan chickpea salad sandwich turkey and redcurrant jelly sandwich turkey and spicy mango chutney sandwich |

I'm sorry - I'm going to post my lunchbox link again.

I bought this lunchbox in August, and I've used it nearly every day since then, and mostly I've had very healthy stuff (not always) and I've saved loads of money, and been far more interested in lunch, and had loads more energy in the afternoons, and lost quite a lot of weight. I usually have at least three portions of fruit and veg in my lunch, often more. I've almost stopped eating bread, although I have it sometimes, and have switched to things like wraps, rice salads, quinoa (I love it!) and lots of salad and fruit. |

do five rolls on a sunday and put them in the fridge. it's easy and quick else i wouldn't be doing it

If you're tired of wholemeal bread, why not try wraps, or bagels?
If you're tired of sandwiches, theres always soup,pasta salad,cous cous salad,salad bowls, baked potatoes.chicken pieces,sushi etc one of my favourites is tuna with mixed beans and red onion. If you have access to a microwave then leftovers can be really good, stews for example, they taste even better the day after. If not then take a thermos, you can put various things in it, not just soup, hotdogs and beans, stew, fillings for burritos, macaroni and cheese etc. If you want to stick with sandwiches, vary your choice of bread,ciabatta, olive bread, foccacia,soda bread etc and salad, different varities of lettuce can make a real difference, also add some other veg, roasted peppers in balsamic vinegar are nice as is avocado.. Also relishes,different types of mayo and dressings can make a big difference. I've rambled on long enough now, but if you want specific sandwich, salad ideas, let me know your likes and dislikes and I'll see what I can come up with. |

Do you do it in the morning before work or the night before? I don't think I could drag my lazy arse out of bed and prepare lunches like that

I love bagels, especially the seeded ones - putting all sorts of stuff in them and dunking them in sauce.

If you are on a diet, it would help you to lose wheat bread and wheat pasta.
I take a packed lunch in. I normally take left overs or make a spanish type omelette, with veg and ham. (no potatoes but you could) and a smoothie. If you make a big one it will last 2 lunches. I had ratatoute today, with some parma ham. It was fab! |

make your own sushi, it is so much easier than you will think and it is sooooo fillig and healthy. you dont have to use fish either.

If I just had one big lunchbox that wouldn't be practical. The small compartments also come out, so you could put in something bigger if you take one or more of them out. That also means I can take one (eg nuts and fruit) out for nibbling on during the day. I find it doesn't really take me long to prepare at all, depending on what I have. I usually do most of it in the evening while I'm preparing my dinner. I don't think I could do it in the morning. I've found that even when some days I've thought I've got nothing suitable to put in it, and I've thought 'oh sod it, I'll buy a sandwich' that I've then looked in the fridge and found small quantities of things that soon fill up the box. It's definitely an easy way of getting more fruit and veg. In summer I sometimes took in nearly all fruit... |

If any of you do get one, please post some photos too! I'm really nosy about other people's lunches now. Actually, there's a really cool Flickr group for my box (which is what inspired me to get one in the first place) - have a look there for more ideas. Oh, the chick pea pate is lovely! I get it in Tescos (but I think other places stock it too). It's made by Cauldron, and should be in the chiller cabinets near the meat pates, or possibly with the organic/veggie things.
