What to have with Chicken Fajitas?
Any ideas? I'm at a bit of a a loss as to what to serve with them tonight...rice? salad? Cheers!

Just tortillas, sauce and veg do it for me. Peppers, celery, spring onions, or even baby spinach.

I've got one of those Old El Paso kits to which you just add peppers, onions and chicken. There will probably be only 2 each so won't be enough without something to go with it

They're nice but you're just as well buying the individual little spice packets from el paso (or even tesco own brand!) to mix in with the meat and then having a pack of wraps to stick it all in since that's basically what's in the box. .

Home made salsa, very easy to make, just chop up tomatoes, spring onions, coriander and a chilli. Guacamole, or even just sliced avocado. Sour cream. Tomato rice, also very easy, just finely chop an onion and garlic, fry it with the rice until the rice browns, then make a broth with tinned chopped tomatoes whizzed in a blender mixed with stock.

Home made guacamole is very easy too and much better than most of the stuff you buy. Just mash up a couple of ripe avocadoes (the ripe bit is crucial) with a drizzle of garlic oil, the juice of a lime, salt and pepper and a touch of chili or tabasco sauce. Add chopped spring onions and/or tomatoes if you want. Divine.
Mmm, I love chicken fajitas. Is it time for lunch yet?

I bought all the stuff I need, which is the better fajita mix, El Paso or Discovery, I bought both as I haven't used either before.

It's on the way, have made the guacamole, and the tomato salsa. Have the chicken ready to cook with the onions and peppers and spice mix. Cheddar grated, refried beans ready to heat, iceberg ready to shred, tortillas ready to heat up and sour cream in the fridge. Yum yum, can't wait. Ontheloop, thanks for the idea, and also to all the other contributors who gave ideas. (Stomach rumbles!!!)
